Candy Apple Pie Jelly
I do love candy apples, apple pie and jelly - so this was kind of a no brainer. I would not say that this is a "regular" type jelly, but WOW - I sure began thinking about all of the non PBJ ways this jelly could be used. Think jelly rolls, jelly filled cookies, mixed with cream cheese and cottage cheese, it would also be interesting with chicken.
Ingredients:
4 cups of Apple Juice. Unsweetened is best. Regular juice can be used, but it is very sweet.
1/2 cup Red Hot Candies
1 Regular package of pectin
4 1/2 cups sugar

1. Add the juice and candies in a large pot.
2. Warm the juice in a large pot, stir while the candies melt.
3. Once the candy is melted, add the pectin and bring to a boil.
4. Stir in the sugar and return to boil.
5. Boil for 2 minutes. To check if your jelly is done, dip a spoon into the jelly and sit it in the freezer for about 30 seconds. If it is still runny, then cook for longer.
6. Remove from heat.
7. Ladle into hot jars, leaving 1/4 inch head space.
8. Clean the rims, tip with lids and rings.
9. If processing in a water bath, leave the rings loose enough for the air to escape while in the water bath.
10. Process in a water bath - time depends on altitude.
It would also taste great on some of my bread!
Or try it on a cracker, cream cheese and some smoked salmon
